Non-stick wok vs carbon steel wok
Let’s get into it then.
You should know that non-stick surfaces are not ideal for cooking at high temperatures which is one of its drawbacks as most stir-fry dishes have to be cooked at about 260°C. However, over the years, it’s been developed to be able to withstand higher temperatures. Your food won't turn out as crisp but it does a pretty good job and is more convenient since it’s easier to clean and maintain.
A downside is how prone it is to scratching. Non-stick woks generally have a shorter lifespan compared to carbon steel woks.
On the other hand, carbon steel woks are inexpensive, durable, and lightweight. The wok has high heat tolerance, heating evenly and providing rapid heat conduction which is important when stir-frying. But, they are susceptible to rusting and decolouration and require more maintenance.
Carbon steel woks are preferred by chefs for its versatility, durability, and its effectiveness for searing coupled with the fact that it produces a “smokier” taste to dishes. With proper care, they can last for years but do bear in mind that it isn’t dishwasher safe.
Home cooks who make dishes over medium heat will appreciate the convenience of a non-stick wok.
How to clean non-stick wok
You should always leave the wok to cool before letting it come into contact with cold water. Then, use gentle dishwashing liquid and a soft sponge or microfibre cloth. Do not use steel wool or any abrasive cleaning materials as it’s detrimental to the non-stick coating.
To remove stubborn grime, try mixing a 1/4 cup of baking soda with 2-3 inches of water in your wok and let it simmer for approximately 10 minutes.
and 1.5 cups water in your wok. Then, let it cool before washing as usual with warm water, gentle dish soap and a cloth or sponge.
How do I choose a good wok
Here are some factors you should consider:
1. Size
If you’re cooking for a big family, then you’ll need a big wok to avoid happing to cook more than one round. But, if you’re cooking for 1-2 people, it’s best you pick a smaller model as it’s easy to burn food when cooking small portions in a large wok.
2. Material/Type
Think about what you’ll be cooking with the wok when deciding what type of metal wok to get. Each material, whether iron, carbon steel, or non-stick has its own set of pros and cons.
3. Handles
Decide whether you’d prefer a wok with two handles or a single long handle. The latter is great for smaller woks and swirling oil around. The double loop-style handles are good for large woks that are difficult to lift with just one handle.
Besides, give the material of the handles some thought. It’s easier to lift the wok with a heat-resistant wooden handle, without the need for a potholder. Stainless steel handles are sturdy and are also heat-resistant, remaining relatively cool for a good while.
