5 Easy Egg Recipes You Can Master At Home This MCO

Basic Scrambled Eggs

One of the easiest recipes to learn when you start cooking should be scrambled eggs. Quick, nutritious and just plain tasty, it makes a good breakfast when paired with a serving of fruits, bread or both!

Prep time: Under 10 minutes | Cook time: 5 minutes | Serves:

Ingredients: 

  • 4 eggs
  • Salt, for taste
  • Pepper, for taste
  • 1 tbsp unsalted butter

Preparation: 

  1. In a bowl, break all eggs and whisk until yellow. Add a dash of salt and pepper, then whisk again to combine.
  2. In a pan, over medium heat (fire), add in butter. Once it starts to melt and bubble, turn the heat to low and add in the eggs.
  3. Gently stir or push and pull the eggs back and forth until eggs are in pieces (curds).
  4. Remove from the pan and enjoy!

Tip: Add in a teaspoon of milk per egg while whisking if you want your eggs to be fluffy. You’re welcome!


Poached Egg

Poached eggs are a more delicate, elegant way to cook eggs compared to boiled eggs, both needing to be cooked at a higher temperature via boiling.

Like boiled eggs, poached eggs contain the least amount of calories (155kcal) due to their cooking method that doesn't require any seasonings. When paired with toast or avocado, they make for a great, simple egg-based meal. 

Prep time: under 10 minutes | Cook time: under 5 minutes | Servings: 1

Ingredients:

  • 1 egg
  • Salt, for taste
  • Pepper, for taste

Preparation:

  1. Bring a pot of water to a boil. Then reduce heat to a simmer for poaching temperature ( ideally between 71-82°C ).
  2. Create a whirlpool by stirring the water in a clockwise direction. Once the water begins to slow down, crack open the egg into the centre of the whirlpool. 
  3. Let the egg cook for 3-5 minutes until the whites are fully set.
  4. Remove the egg with a slotted spoon (or drainer) and pat it dry on a kitchen paper towel.
  5. Place onto a plate and add some salt and pepper to taste.

Omelette Cups

These cute little cups are a treat for the eyes and for the mouth too! As a dish that screams “fancy”, this one’s a recipe you’ll be trying and experimenting on quite often as well as, need we say, devouring every single cup too?

Prep time: 30 minutes | Cook time: 30-40 minutes | Servings: 12

Ingredients:

  • 36 tater tots (mini hash browns as an alternative), thawed
  • 8 eggs
  • 3tbsp milk
  • Salt, for taste
  • Pepper, for taste
  • Omelette filling (your choice of ingredients, such as cheese and broccoli)

Preparation:

  1. In a bowl, whisk the eggs, milk, salt and pepper together.
  2. Flatten 3 tater tots into each cup of a non-stick muffin tin tray.
  3. Place your desired fillings into each cup after the tater tots.
  4. Pour the egg mixture into each cup.
  5. Bake for 20 minutes or until fully cooked at 177°C.
  6. Remove from the oven and cool down before eating.

Tip: for a healthier approach, instead of using hash browns, use cauliflower rice!


Classic Omelette With A Twist

We know an omelette can be pretty basic but if you pair it up with a blend of vegetables and serve it on a platter with some fruits, there’s your fancy spread!

Prep time: 5-10 minutes | Cook time: 5 minutes | Servings: 1

Ingredients:

  • 3 eggs
  • 1 tbsp butter
  • Tomato, chopped (optional)
  • Cheese (optional)
  • Mushroom, sliced and sautéed (optional)
  • Spinach, cooked (optional)

Preparations:

  1. In a bowl, whisk all 3 eggs.
  2. Set a pan over medium heat and melt butter.
  3. Pour in the eggs. Stir until the eggs form a few curds without tearing the base. Then, reduce heat to low and flatten the eggs, making sure the base covers the whole pan.
  4. Add in your desired fillings in the middle and wait for 1-2 minutes until eggs are set.
  5. Roll the omelette and gently transfer it onto a plate.

English-Muffin Egg Pizzas

Who said pizza making has to be complicated? This dish is meat-free, loaded with protein, is done in less than 30 minutes and can be a fun surprise for vegetarians that are trying to spice up their menus!

Prep time: 5 minutes | Cook time: 10 minutes | Servings:

Ingredients:

  • 4 English muffins, halved (wholemeal bread as an alternative)
  • Olive oil, as desired
  • Tomato slices
  • 2 hard-boiled eggs, sliced
  • Mozzarella, grated
  • Oregano, as desired
  • Kosher salt (or regular salt), for taste

Preparation:

  1. Boil the eggs and keep them aside.
  2. Toast the 8 English-muffin halves (bread) and place them on a baking pan with a sheet.
  3. Drizzle each muffin or bread with olive oil, then place in order: tomato slices, egg slices (½ an egg for each) and garnish with a little mozzarella on top. Finish each set with a sprinkle of oregano and salt.
  4. Broil for 5 minutes or until cheese begins to melt.
